摘要:本实验以壳聚糖、大豆分离蛋白、魔芋等为主要原料制作壳聚糖-明胶复合膜、大豆分离蛋白-液体石蜡复合膜、魔芋胶-液体石蜡复合膜,对重组鸭排进行涂膜处理。研究在4±1℃贮藏条件下,不同种类的涂膜液在重组鸭排贮藏10d之中品质如水分含量、挥发性盐基氮、菌落总数、MDA值、质构品质的变化。

   结果表明:涂膜相比未涂膜对延长鸭排品质有显著提高;壳聚糖复合膜液对鸭排进行涂膜效果最佳,7d是壳聚糖复合膜液涂膜鸭排的最佳贮藏期,7d时,壳聚糖复合膜液涂膜鸭排的硬度是4.114N、最大粘附力是-0.172N、弹性是1.05mm、胶黏性是0.806N、咀嚼性是0.85mJ、凝胶强度是7.633N、起始破裂力是5.776N、菌落总数是436781cfu/g、挥发性盐基氮是12.22mg/100g、水分含量是66.75%、MDA值是16.22mg/100g。

Abstract:This experiment by chitosan, soy protein isolated, konjac, etc as the main raw material made of chitosan, gelatin composite film, soy protein isolated - liquid paraffin composite membrane, konjac gum - liquid paraffin composite membrane, the reorganization of the duck coating processing. Research under the 4 ± 1 ℃ storage conditions, different kinds of coating liquid in restructuring duck store 10 d quality such as moisture content, total volatile base nitrogen, colony, MDA value, quality and structure changes in the quality.

    Compared results show that the coating film not to extend the duck comes quality has improved significantly; Chitosan composite membrane liquid coating on duck row effect best, seven days is chitosan composite membrane liquid coating duck best storage period, the seventh days, chitosan composite membrane liquid coating hardness is 4.114 N, duck row biggest adhesive force is 0.172 N, elasticity is 1.05 mm, glue viscosity is 0.806 N, chewiness was 0.85 mJ, gel strength is 7.633 N, initial rupture force is 5.776 N, the total number of colonies is 436781 cfu/g, volatile base nitrogen was 12.22 mg / 100 g, moisture content is 66.75%, the MDA value is 16.22 mg / 100 g.
