摘要:我国餐饮市场发展迅速、市场潜力大、发展前景好,吸引越来越多的投资者投入到其中来。然而,众多餐饮投资者在获得利益的同时,也面临着越来越多的竞争者。餐饮市场竞争越来越激烈。每天都有新的餐厅出现,个性化、创新化越来越来吃香;每天都有餐厅因经营不善而关闭。而关闭的餐厅数量远远大于存活的餐厅数量。中小餐厅占据餐饮市场不小的分量,中小餐厅也是面临的竞争也是最为激烈的。开拓新顾客、留住回头客是扩大客源的好方法。将新顾客变成回头客更能为餐厅带来更多的利益与客源。

Abstract:Food market in China has developed rapidly, market potential and development prospects, and to attract more and more investor into it . However, many restaurant investor in benefits at the same time, also faces a growing number of competitors. Restaurant market increasingly competitive. New restaurant appear every day, individuality and innovation of more and more sought after; close due to poor management of the restaurant every day. Turn off number is much larger than the survival of the dining room of the restaurant. Small and medium-sized restaurants occupy the food component of the market is not small, faced by small and medium-sized restaurants are also the most competitive. Develop new customers and retain repeat business is a good way to expand tourist. New customers become repeat customers more likely to bring more benefits to restaurants and tourist.

   餐厅要想获利,就要有大量的客源。除了开辟新客源外,还要牢牢捉住老顾客的心,让他们成为固定的回头客。回头客,既能为餐厅带来利润,又能为餐厅带来更多的新顾客,并影响身边的潜在顾客,为餐厅树立形象。餐饮市场,商机与竞争并存。只有把握住顾客,才能获得成功。没有顾客的餐厅也就没有发展的空间。关注顾客,重视顾客,才能获得顾客的忠诚,餐厅才能更好的持续发展。市场经济的发展下,顾客已成为市场的主导者,顾客不再满足于单一选择。只有提供与众不同的选择,才能获得顾客的忠诚与选择。中小餐厅在这样的市场环境中,重视顾客的忠诚度,培养顾客的忠诚度,使更多的顾客成为回头客,才是餐厅的发展道路,才能为餐厅带来更多的利润与新顾客。
